Summer cocktail season has officially arrived, and the very thought of lounging by a pool or idling away the hours on a porch soundtracked by Steely Dan or whatever ambient 70s soft rock that floats your personal yacht is a delightful one, particularly if you have been ravaged by spectacularly cold weather over the winter. But for every Aperol Spritz or Michelada we quietly long for at the nadir of SAD season—it’s February, always February—there’s one drink you should likely get into your steady rotation.

And that’s calimocho, or kalimotxo. Originating in the Basque Country, this mixture of red wine and cola might seem stomach-churning for some, but with the addition of a few ice cubes, you might just catch a whiff of Death in the Afternoon-style cafe culture.
