Many folks are discovering the wonderful world that is mezcal, a Mexican spirit made from the agave plant.
One particular type of mezcal has enjoyed popularity for years domestically and abroad—tequila. To be called tequila, the product must come from blue agave in a specific region of central Mexico. Other parts of the country, however, distill cooked agave to create mezcal, which can bring terroir to the fore, making every mezcal as unique as the place it gets made and the people who craft it.
