Cielo Sommerso is a bio-dynamic white wine from Tenuta San Marcello in the Italian region of Marche. The wine is unique in how itâs fermented â The makers have adhered to an ancient technique of ageing the wine in clay pots which are buried in the earth for a period of 8 months, resulting in incredibly rich and vibrant flavours.
Tenuta San Marcello is a small independent winery founded by Massimo and Pascale, a couple that in 2012 fell in love with the hills of Marche and decided to start cultivating that land and live of its fruits. Years of meticulous care of their vines and research about natural methods of agriculture and wine-making led Massimo to visit Georgia where he had a chance to learn about fermentation in Amphora â an ancient Hellenic technique where the entire grapes, including skin and stems are left to macerate over a long period of time in an amphora buried underground. Cielo Sommerso is the first wine produced by the Tenuta using this technique.
